This cake may look delicious and perfect in every way. I can assure you it is delicious, but tonight I made a massive error.
To any aspiring bakers out there, the mistakes I made tonight are ones we can all learn from. Do not make a cake for your boyfriend's staff meeting in a rush or disaster will occur!
Firstly, this cake is made up of two sponges with a layer of ganache in between. I don't have two identical cake tins so I had to do two separately back to back. This not only was a waste of gas but also time consuming. The first one took so long (deffo not 30 mins as the recipe says) and by the time I had it out of the oven I was desperate to get sponge number 2 underway. I gave it about 3 minutes to rest then tried to prize it from the springform tin, which led to the whole sponge breaking into several pieces.
The second sponge went to plan thank goodness, but because of the broken state of sponge #1, I had to put the fractured base facing down on the cake board. This is kind of against the rules of layer sponge making because the shiny hard top won't absorb the layer of buttercream/icing/ganache you slather over it. Anyway I chose to continue with this and haphazardly assemble the cake. I glued the broken bits together with ganache.
I have worries though, that tomorrow when someone cuts into the cake it's internal damage will be revealed and the whole thing will fall apart. Which won't only damage my reputation as the master baker of Warrington but also embarrass my boyfriend who has been telling everyone how good this cake is going to be for the last week...
Only time will tell as to what happens, but the moral of the story is, always wait for your sponge to rest and cool before removing it from its tin, and if you are going to make a sponge with more than one layer, it is probably best to have two matching tins.
P.S. This is a Nigella Lawson recipe (obvs), and it is absolutely amazing to eat, so if anyone wants the recipe i'll put it on here!

Ellie this is the bane of my baking life!!! cracked sponge is no fun :'( I am always impatient to get my sponge out of the tin. stupidly I once cooked a really tall sponge to cut in half, and once I'd cut it I immediately licked the knife and burnt my tongue soooo badly I was sat with it in a little pot of yoghurt for hours. anyways this cake looks tasty as fuck well done! I'm sure the structure will be fine when it's cut into :) x
